Ingredients

Bread

  • 1 loaf rustic Italian bread or baguette (sliced into 1/2-inch slices)

Tomatoes

  • 3 medium-sized ripe tomatoes, diced

Garlic

  • 2-3 cloves garlic, minced

Basil

  • 1/4 cup fresh basil leaves, chopped

Olive Oil

  • 3 tablespoons extra virgin olive oil

Balsamic Vinegar

  • 1 tablespoon balsamic vinegar

Salt

Black Pepper

Cheese (Optional)

Instructions 

  • Slice bread into 1/2-inch pieces and toast until golden.
  • Mix diced tomatoes, garlic, basil, olive oil, and balsamic vinegar in a bowl.
  • Season with salt and black pepper to taste.
  • Top toasted bread slices with tomato mixture and optional cheese.
  • Serve immediately as an appetizer or light meal.

Notes

For extra flavor, rub toasted bread with a garlic clove before topping.
