Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Wet Ingredients

  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Carrots and Add-ins

  • 2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Frosting

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch pans.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, then fold in carrots and optional add-ins.
  • Divide batter into pans and bake for 25-30 minutes. Cool completely.
  • Make frosting by beating butter and cream cheese, then add powdered sugar and vanilla.
  • Assemble cake with frosting, then serve at room temperature.

Notes

For a richer flavor, toast the nuts before folding into the batter.
