A simple and flavorful Italian appetizer featuring toasted baguette slices topped with fresh tomato and basil mixture.

Ingredients

Tomato mixture

  • 6 pieces Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup fresh basil leaves (chopped)
  • 5 cloves garlic cloves (minced)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil (for tomato mixture)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Bread

  • 1 piece baguette
  • 3 Tbsp extra virgin olive oil (for bread)
  • 1/3 cup shredded parmesan cheese

Optional toppings

  • to taste balsamic glaze (for drizzling)

Instructions 

  • Mix diced tomatoes, chopped basil, 1 tsp minced garlic, 1 Tbsp olive oil, balsamic vinegar, salt, and pepper. Let sit 30 minutes.
  • Preheat oven to 400°F (200°C). Slice baguette diagonally into 1/2-inch pieces.
  • Brush bread slices with garlic-infused olive oil, sprinkle with parmesan, and bake for 5 minutes. Broil 1-2 minutes until golden.
  • Arrange toasts on a platter. Spoon tomato mixture onto each toast and drizzle with balsamic glaze if desired.

Notes

Use fresh, ripe tomatoes for best flavor.
