A fresh and vibrant quinoa salad combining citrus, herbs, and tuna for a light, nutritious meal.
Ingredients

quinoa, rinsed

vegetable broth
Seafood

x 5 oz cans
Genova Yellowfin Tuna, drained
Vegetables

cup
thinly sliced zucchini, cut into quarters

shallot
thinly sliced shallot
Nuts & Zest

cup
toasted slivered almonds
Zest of one lemon
lemon zest
Dressing & Herbs

lemon
lemon, zester and juiced

extra virgin olive oil

garlic, minced

chopped fresh dill

Instructions
Rinse the quinoa and toast it in a saucepan for 2 minutes.
Add vegetable broth, simmer for 15 minutes, then fluff and cool.
Whisk dressing ingredients together and set aside.
Mix cooled quinoa with tuna, zucchini, shallot, almonds, lemon zest, and dressing. Toss gently.
Serve with lemon wedges and fresh herbs.
Notes
For extra flavor, add more herbs or a squeeze of lemon before serving.
