Dough
3 ¼cupsAll-Purpose Flour
¼cuppotato flour OR dry instant mashed potatoes(unflavored)
3tablespoonsgranulated sugar
1 ½teaspoonsinstant yeast
1 ¼teaspoonssalt
3tablespoonssoft butter
1teaspoonvanilla extract
1largeegg
1 cup + 2 tablespoonsmilkroom-temperature or lukewarm milk
Filling
1cuppeeled (grated apple)(about 1 large apple or 1-2 smaller apples)
1tablespoonlemon juice
½cupgranulated sugar
3tablespoonscornstarch or Instant ClearJel
1teaspooncinnamon
Glaze
1cuppowdered sugar
1teaspoonvanilla extract
⅛teaspoonsalt
1 to 2tablespoonswater or apple juice OR heavy cream
Instructions
Mix dry ingredients, add butter, vanilla, egg, and milk; knead into a shaggy dough. Let rest 30 minutes if possible.
Knead until smooth and slightly sticky, then let rise until nearly doubled, about 1.5 to 2 hours.
Prepare filling: toss grated apple with lemon juice, cook with sugar, cornstarch, cinnamon until thickened, then cool.
Divide dough, roll into rectangles, spread filling, sprinkle nuts if desired, then roll, cut in half lengthwise, and twist into a braid. Let rise 1-2 hours.
Bake at 350°F (175°C) for 30-40 minutes until golden; cool before glazing.
Mix glaze ingredients, drizzle over cooled bread before serving.
Notes
For best flavor, allow the bread to cool completely before glazing. Reheat slices for a warm treat.
