These homemade cinnamon apple granola bars are a delicious and healthy snack, packed with dried apples, oats, and a hint of cinnamon.

Ingredients

Dried Fruits and Nuts

  • 1 packed cup medjool dates (pitted and chopped)
  • ½ cup almond butter (or cashew butter)
  • ⅓ cup brown rice syrup (or golden syrup or corn syrup)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 4 tablespoons ground flax seed
  • ¾ cup chopped dried apple
  • 1½ cup puffed rice
  • 1¼ cup rolled oats (gluten-free if necessary)

Instructions 

  • If dates are hard, soak in boiling water for 10-15 minutes, then drain.
  • Blend oats in a food processor until coarse flour, then transfer to a bowl.
  • Process dates until finely chopped and starting to ball up.
  • Combine dates, almond butter, syrup, vanilla, salt, and cinnamon in a saucepan; warm until melted and mixed.
  • Mix the warm mixture into the oats and add flax, dried apple, puffed rice, and oats; stir well.
  • Press mixture into the prepared pan, flattening firmly; refrigerate for 3-4 hours to set.
  • Cut into bars or squares once set and enjoy.

Notes

Press firmly when shaping to ensure bars hold together well.
