A moist and flavorful apple cake infused with cinnamon, perfect for a cozy treat or dessert.

Ingredients

Dry ingredients

  • 210 grams plain flour or all purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 150 grams caster sugar or granulated sugar

Fruits

  • 1 cup red apple, peeled and roughly chopped

Wet ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml vegetable oil or flavourless oil
  • 120 ml Greek yogurt
  • 50 grams caster sugar or granulated sugar

Spices and toppings

  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 30 grams icing sugar or powdered sugar, sifted
  • 1-2 tablespoons milk (for glaze)

Instructions 

  • Preheat oven to 180°C (350°F). Grease an 8-inch round cake pan and line with parchment paper.
  • Mix dry ingredients and chopped apple in a bowl. In another bowl, whisk eggs, vanilla, oil, and yogurt.
  • Combine wet and dry ingredients gently. Pour batter into prepared pan.
  • Mix sugar, cinnamon, and melted butter to make topping; sprinkle over batter.
  • Bake for 30-35 minutes until a skewer comes out clean. Cool completely.
  • Mix powdered sugar with milk to make glaze; drizzle over cooled cake.

Notes

For a richer flavor, add a pinch of nutmeg or serve with whipped cream.
