These delicious and nutritious energy balls are perfect for a quick snack or a healthy treat, combining the rich flavors of chocolate and hazelnuts.

Ingredients

Hazelnuts

  • 1 ½ cups hazelnuts (toasted and cooled)
  • 10 large Medjool dates (soaked and pitted)
  • 2 ½ tablespoons cacao powder (unsweetened)
  • ½ tsp vanilla extract
  • 1 - 2 tablespoons water (as needed)

Instructions 

  • Preheat oven to 325ºF. Toast hazelnuts for 8-10 minutes, then cool and remove skins.
  • Add toasted hazelnuts, soaked dates, cacao powder, and vanilla to a food processor. Process until mixture is sticky, adding water as needed.
  • Use a tablespoon to roll mixture into balls or press into a pan for bars. Store in fridge or freezer.

Notes

Keep stored in an airtight container for up to 2 weeks in the fridge.
