Delicious and nutritious muffins perfect for kids, packed with protein and chocolate chips for a treat they will love.

Ingredients

Dairy & Eggs

  • 2 pcs eggs (room temperature, about 70°F)
  • 1/2 cup coconut oil (melted and cooled to room temperature)

Dairy & Yogurt

  • 1 cup greek yogurt (preferably Fage 2% for extra creaminess)
  • 1/3 cup maple syrup
  • 1 tsp vanilla

Dry Ingredients

  • 1.75 cups flour (King Arthur all-purpose flour)
  • 2 scoops collagen
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Add-ins

  • 1 cup chocolate chips (Enjoy Life mini chips for better distribution)

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Mix eggs, coconut oil, greek yogurt, maple syrup, and vanilla until well combined.
  • In a separate bowl, whisk together flour, collagen, baking powder, baking soda, salt, and cinnamon.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips.
  • Divide batter evenly into muffin cups and bake for 20 minutes or until a toothpick inserted comes out clean.

Notes

For extra moisture, add a splash of milk if batter seems too thick.
