These healthy and delicious cookies combine ripe bananas, oats, and chocolate chips for a quick treat that’s perfect for any time of day.

Ingredients

Bananas

  • 2 large ripe bananas, mashed (approx 3/4 cup mashed)

Nut Butters

  • 1/2 cup almond butter (can substitute peanut butter)

Sweeteners

  • 3 tbsp maple syrup

Flavorings

  • 1 tsp vanilla extract

Dry Ingredients

  • 2 cups rolled oats (gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)

Add-ins

  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix mashed bananas, almond butter, maple syrup, and vanilla in a bowl.
  • Combine oats, salt, cinnamon, chocolate chips, and walnuts in another bowl.
  • Add wet ingredients to dry and mix until combined. Scoop onto baking sheet and flatten slightly.
  • Bake for 12-15 minutes until golden around edges.

Notes

For softer cookies, bake for the full 15 minutes.
