A vibrant and flavorful salad combining smoky chipotle shrimp with fresh greens and a zesty cilantro vinaigrette.

Ingredients

Dressing

  • 0.33 cup avocado oil (or olive oil)
  • 0.25 cup lime juice (from 3 small limes)
  • 1 tablespoon raw honey (or pure maple syrup or date syrup)
  • 1 tablespoon minced fresh jalapeño
  • 2 cloves garlic (minced)
  • 0.33 cup cilantro leaves
  • 0.125 teaspoon sea salt (or to taste)
  • 1 lb Shrimp (peeled and deveined)
  • 1.5 tablespoons olive oil (or avocado oil)
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon sea salt
  • 6 cups Salad (romaine lettuce or greens)
  • 3 small radishes (thinly sliced)
  • 1 shallot shallot (thinly sliced)
  • 1 nectarine nectarine (or peach, thinly sliced)
  • 1 avocado avocado (peeled and thinly sliced)

Instructions 

  • Whisk together all dressing ingredients and set aside.
  • Season shrimp with chipotle chili powder, garlic powder, cumin, and sea salt. Sauté in olive oil until cooked through, about 3-4 minutes per side.
  • In a large bowl, toss greens, radishes, shallot, nectarine, and avocado.
  • Slice cooked shrimp and add to the salad. Drizzle with cilantro vinaigrette and toss gently.
  • Serve immediately garnished with cilantro leaves if desired.

Notes

For extra flavor, marinate shrimp in some of the dressing before cooking.
