Instructions
Whisk together all dressing ingredients and set aside.
Season shrimp with chipotle chili powder, garlic powder, cumin, and sea salt. Sauté in olive oil until cooked through, about 3-4 minutes per side.
In a large bowl, toss greens, radishes, shallot, nectarine, and avocado.
Slice cooked shrimp and add to the salad. Drizzle with cilantro vinaigrette and toss gently.
Serve immediately garnished with cilantro leaves if desired.
Notes
For extra flavor, marinate shrimp in some of the dressing before cooking.
