1largeyellow onion, diced
1greengreen bell pepper, diced
1redred bell pepper, diced
4largegarlic cloves, minced
1teaspoonsea salt
0.5teaspoonfreshly cracked black pepper
1can (13.5 oz)kidney beans, drained and rinsed
1can (14 oz)crushed tomatoes
1can (6 oz)tomato paste
2cubesbeef bouillon, crushed
0.25cupmild chili powder
2teaspoonsground cumin
1teaspoondried oregano
1tablespoonsugar
0.5teaspooncayenne pepper, optional
Garnishes and toppings
Chopped fresh cilantro
Chopped green onions
Sour cream
Grated cheddar or mozzarella cheese
Thinly sliced jalapeño
Instructions
Heat a large Dutch oven over medium-high heat. Add beef, onion, peppers, garlic, salt, and pepper; cook until browned, 8-10 minutes.
Add beans, tomatoes, tomato paste, bouillon, chili powder, cumin, oregano, sugar, and cayenne. Cover with water (~1-1.5 cups) and stir. Bring to a boil, then simmer for 2 hours or more.
Taste and adjust seasoning with salt. Serve in bowls garnished with cilantro, green onions, sour cream, cheese, and jalapeños.
Notes
For a spicier chili, add more cayenne or sliced jalapeños.
