Ingredients

Meat and Vegetables

  • 2 pounds 80/20 ground beef
  • 1 large yellow onion, diced
  • 1 green green bell pepper, diced
  • 1 red red bell pepper, diced
  • 4 large garlic cloves, minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly cracked black pepper
  • 1 can (13.5 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cubes beef bouillon, crushed
  • 0.25 cup mild chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon sugar
  • 0.5 teaspoon cayenne pepper, optional

Garnishes and toppings

  • Chopped fresh cilantro
  • Chopped green onions
  • Sour cream
  • Grated cheddar or mozzarella cheese
  • Thinly sliced jalapeño

Instructions 

  • Heat a large Dutch oven over medium-high heat. Add beef, onion, peppers, garlic, salt, and pepper; cook until browned, 8-10 minutes.
  • Add beans, tomatoes, tomato paste, bouillon, chili powder, cumin, oregano, sugar, and cayenne. Cover with water (~1-1.5 cups) and stir. Bring to a boil, then simmer for 2 hours or more.
  • Taste and adjust seasoning with salt. Serve in bowls garnished with cilantro, green onions, sour cream, cheese, and jalapeños.

Notes

For a spicier chili, add more cayenne or sliced jalapeños.
