A flavorful and quick Asian-inspired dish combining tender chicken, fresh vegetables, and savory teriyaki noodles.

Ingredients

Protein

  • 1 lb chicken thighs, cut into bite-sized pieces (can substitute with chicken breast)
  • 12 oz udon noodles (or soba, ramen, or spaghetti)

Vegetables

  • 2 cups broccoli florets (fresh or frozen)
  • 1 medium onion, thinly sliced
  • 2 medium carrots, julienned (cut into thin matchsticks)
  • 3 cloves garlic, minced (fresh preferred)
  • 1 tablespoon fresh ginger, grated (adds warmth and spice)
  • 0.5 cup soy sauce (low-sodium optional)
  • 0.25 cup brown sugar (for sweetness)
  • 1 tablespoon honey (optional)
  • 2 tablespoons vegetable oil (for stir-frying)

Instructions 

  • Mix soy sauce, brown sugar, and honey; marinate chicken for at least 10 minutes.
  • Cook chicken in a hot skillet with 1 tbsp oil until golden and cooked through, then set aside.
  • Cook noodles according to package, drain, and rinse with cold water.
  • Stir-fry garlic, ginger, onions, carrots, and broccoli in the same skillet until tender.
  • Return chicken to skillet, add noodles, and toss with sauce; cook 2-3 minutes to combine flavors.

Notes

For extra flavor, garnish with sesame seeds or sliced green onions.
