A flavorful and easy-to-make chicken taco pasta dish that combines the zest of tacos with comforting pasta.

Ingredients

Pasta

  • 13.25 ounces Dreamfields Pasta
  • 1 tablespoon olive oil
  • 1 medium onion (diced (about 2 cups or 12 ounces))
  • 1 red bell pepper red bell pepper (diced (1 cup))
  • 1 green bell pepper green bell pepper (diced (1 cup))
  • 4 cloves garlic (pressed or finely minced)
  • 1 cup corn (frozen or canned)
  • 1 cup black beans (drained (canned))
  • 3 tablespoons taco seasoning (store bought or homemade)
  • 2 cups cooked chicken breast (diced (about 12 ounces))
  • 1 cup restaurant style salsa
  • 6 ounces pepper jack cheese (shredded (about 1.5 cups, can use reduced fat or regular))
  • to taste salt salt

  • for garnish chopped cilantro chopped fresh cilantro (optional)

Instructions 

  • Cook pasta until al dente, drain, and set aside.
  • Sauté onion and bell peppers in olive oil until soft, then add garlic and cook briefly.
  • Add beans, corn, chicken, taco seasoning, and salsa; cook until heated through, adding pasta water if needed.
  • Combine the cooked pasta with the chicken mixture, then stir in shredded cheese until melted.
  • Season with salt and pepper, garnish with cilantro, and serve.

Notes

Feel free to add more cilantro or cheese to taste.
