Instructions
Cook pasta until al dente, drain, and set aside.
Sauté onion and bell peppers in olive oil until soft, then add garlic and cook briefly.
Add beans, corn, chicken, taco seasoning, and salsa; cook until heated through, adding pasta water if needed.
Combine the cooked pasta with the chicken mixture, then stir in shredded cheese until melted.
Season with salt and pepper, garnish with cilantro, and serve.
Notes
Feel free to add more cilantro or cheese to taste.
