A quick and flavorful chicken stir fry packed with colorful vegetables and savory sauce.

Ingredients

Protein

  • 1 pound boneless skinless chicken breast, cut into 1-inch pieces

Oil

  • 2 tablespoons avocado oil

Seasoning

  • to taste Salt and pepper

Vegetables

  • 1 red bell pepper deseeded and chopped
  • 1 small carrot thinly sliced
  • 2 cups broccoli florets (cut into bite-sized pieces)
  • 1 small yellow onion chopped

Flavorings

  • 1 tablespoon finely grated fresh ginger
  • 4 cloves garlic, minced

Sauces & Liquids

  • 1/4 cup chicken broth
  • 1/4 cup tamari soy sauce (or coconut aminos)
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon cornstarch (or arrowroot powder)

Garnish

  • 1 tablespoon sesame seeds
  • 1 green onion sliced

Instructions 

  • Heat oil in a large skillet over medium-high heat. Cook chicken until browned, then set aside.
  • Stir-fry vegetables and ginger for 3-4 minutes until tender-crisp.
  • Mix soy sauce, broth, honey, vinegar, and cornstarch; add to skillet and cook until sauce thickens.
  • Return chicken to skillet, toss to coat, and cook for 2 minutes.
  • Garnish with sesame seeds and sliced green onion before serving.

Notes

Use fresh ginger and garlic for best flavor. Adjust soy sauce for saltiness.
