Instructions
Marinate chicken with soy sauce and cornstarch for 10 minutes.
Whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, chicken broth, and cornstarch for sauce.
Cook chicken in a skillet with 1/2 tbsp olive oil until golden, then set aside.
Stir-fry vegetables in the same skillet with remaining oil until tender-crisp.
Return chicken to skillet, add sauce, and simmer until thickened. Garnish and serve.
Notes
Serve over rice or noodles for a complete meal.
