Ingredients

Vegetables and Aromatics

  • 10 oz cherry tomatoes (sliced in half)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/4 teaspoon salt

Main Protein

  • 1.5 lb chicken breast (skinless, boneless)
  • 1/4 teaspoon salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon Italian seasoning

Additional Oil

  • 2 tablespoons olive oil
  • 1/2 lemon lemon (preferably Meyer, thinly sliced)

Garlic and Butter

  • 4 cloves garlic
  • 4 tablespoons butter

Pasta

  • 8 oz spaghetti

Cheese

  • 8 oz Burrata cheese

Herbs and Nuts

  • 1/2 cup fresh basil (chopped)
  • 1/3 cup pine nuts (lightly toasted)

Instructions 

  • Cook spaghetti according to package instructions; drain and set aside.
  • Sauté garlic in olive oil, add cherry tomatoes, and cook until softened.
  • Cook chicken breasts with spices, then slice thinly.
  • Prepare lemon butter sauce by melting butter with garlic and lemon slices, then toss with cooked pasta, chicken, and sauce.
  • Top with Burrata, basil, and toasted pine nuts before serving.
