A flavorful and easy chicken rice meal perfect for meal prep, combining tender chicken, vegetables, and savory sauce.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 tablespoon fresh ginger (grated)
  • 4 green onions green onions (chopped)
  • 1 cup mixed vegetables (bell peppers and carrots)
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or brown sugar

Instructions 

  • Wash and chop vegetables; season chicken with salt and pepper.
  • Cook chicken in a skillet with oil until golden (5-7 min). Add vegetables and ginger; sauté 3-4 min.
  • Cook rice in chicken broth until tender (15-20 min).
  • Mix soy sauce, sesame oil, and honey; pour over chicken and vegetables.
  • Fluff rice and combine with chicken and vegetables; serve.

Notes

For extra flavor, marinate chicken beforehand or add sesame seeds on top.
