A delicious and easy chicken quesadilla recipe perfect for a quick meal. Filled with seasoned chicken, peppers, and melted cheese, served with salsa and sour cream.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts (cut into small pieces)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon onion powder
  • 1 piece red bell pepper (finely diced)
  • 1 piece green bell pepper (finely diced)
  • 1 small red onion (finely diced)
  • 3 cups shredded mozzarella cheese
  • 8 medium flour tortillas
  • salsa and sour cream for serving

Instructions 

  • Cook seasoned chicken in a skillet over medium-high heat until done, about 6-8 minutes. Remove and keep warm.
  • Sauté peppers and onions until softened and browned, about 5-8 minutes. Remove and set aside.
  • Wipe the skillet, spray with non-stick spray, then place a tortilla in the skillet. Layer with cheese, peppers, chicken, and more cheese. Fold in half.
  • Cook each quesadilla until golden and cheese melts, about 3 minutes per side. Repeat with remaining tortillas.
  • Serve hot with salsa and sour cream.

Notes

Use fresh ingredients for best flavor. Adjust cheese and fillings to taste.
