A quick and flavorful cold pasta salad combining tender penne, cooked chicken, fresh tomatoes, and vibrant pesto for a satisfying meal or side dish.

Ingredients

Pasta

  • 4 cups uncooked penne
  • 2 cups cooked chicken ((or more to taste))
  • 5 ounces little tomatoes (halved)
  • 1/4 cup red onion (chopped)
  • 1 cup pesto ((click for my recipe or use store-bought))
  • to taste Salt & pepper

Instructions 

  • Cook the pasta al dente, rinse with cold water, and drain thoroughly.
  • Prep the tomatoes, red onion, and cooked chicken; set aside.
  • Combine pasta, chicken, tomatoes, and onion in a large bowl; toss with pesto.
  • Season with salt and pepper, toss gently to coat evenly.
  • Serve immediately or chill for 30 minutes before serving.

Notes

For best flavor, toss the salad before serving to redistribute the pesto and ingredients.
