Instructions
Cut chicken into ¾-inch cubes, season with ½ teaspoon salt, black pepper, and 1 tablespoon olive oil.
Cook chicken in a skillet over medium heat until golden and cooked through, about 5 minutes. Transfer to a bowl.
Add pasta, chicken stock, and ½ teaspoon salt to the pan. Boil and cook until tender, about 14-16 minutes, adding water if needed.
Reduce heat, stir in pesto, cream, parmesan, sun-dried tomatoes, and cooked chicken. Warm for 2 minutes.
Serve garnished with cherry tomatoes and sliced basil.
Notes
For extra flavor, sprinkle with additional basil or parmesan before serving.
