Instructions
Heat oil in a large pan over medium-high heat. Add chicken, season with salt and pepper, and cook for 5-6 minutes until mostly cooked.
Add mushrooms and onion; cook for 4-5 minutes until vegetables are soft.
Stir in water chestnuts, garlic, and ginger; cook for 1 minute.
Whisk together hoisin, soy sauce, rice vinegar, and sesame oil; pour over chicken mixture and toss to coat.
Sprinkle green onions over the mixture, spoon into lettuce leaves, and serve.
Notes
For extra flavor, add a splash of lime juice before serving.
