Instructions
Heat olive oil in a saucepan over medium-high heat. Add chicken, salt, and pepper; cook until no longer pink, about 5-8 minutes.
Add onions, water chestnuts, mushrooms, carrots, and peppers; cook until vegetables soften, about 5 minutes. Stir in ginger and garlic; cook until fragrant, 1 minute.
In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, sriracha, and sesame oil to make the sauce.
Lower heat, add sauce to skillet, and cook for 2-3 minutes until chicken is well coated.
Serve the chicken mixture scooped onto lettuce leaves, topped with green onions and crushed peanuts if desired.
Notes
For extra flavor, toast the peanuts before adding as a topping.
