A delicious and healthy Asian-inspired dish featuring seasoned ground chicken served in crisp lettuce cups, topped with peanuts and green onions.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1.25 pounds ground chicken
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 diced onion
  • 8 ounces water chestnuts (diced and drained)
  • 4 ounces mushrooms (diced)
  • 2 diced carrots
  • 0.25 red pepper diced
  • 1 teaspoon fresh ginger (minced)
  • 2 cloves garlic (minced)
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sriracha
  • 1 teaspoon toasted sesame oil
  • 1 head Bibb lettuce leaves or butter lettuce
  • 2 green onions thinly sliced

Additional

  • Crushed peanuts for topping

Instructions 

  • Heat olive oil in a saucepan over medium-high heat. Add chicken, salt, and pepper; cook until no longer pink, about 5-8 minutes.
  • Add onions, water chestnuts, mushrooms, carrots, and peppers; cook until vegetables soften, about 5 minutes. Stir in ginger and garlic; cook until fragrant, 1 minute.
  • In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, sriracha, and sesame oil to make the sauce.
  • Lower heat, add sauce to skillet, and cook for 2-3 minutes until chicken is well coated.
  • Serve the chicken mixture scooped onto lettuce leaves, topped with green onions and crushed peanuts if desired.

Notes

For extra flavor, toast the peanuts before adding as a topping.
