A creamy and comforting pasta dish featuring tender chicken and rich Alfredo sauce, perfect for a satisfying meal.

Ingredients

Pasta

  • 8 ounces fettuccine pasta (GF if needed)
  • 2 pieces chicken breasts (cut in half lengthwise, 6 oz each)

Seasoning

  • to taste Kosher salt and ground pepper

Cooking Oil

  • 1 tablespoon olive oil

Sauce Base

  • 1 cup milk of choice
  • 1.5 tablespoons GF flour or cornstarch

Garlic

  • 2 cloves garlic minced

Cream Cheese

  • 4 ounces cream cheese (softened or at room temp)

Broth

  • 0.5 cup chicken broth

Cheese

  • 1 cup Parmesan cheese grated

Garnish

  • to taste Fresh parsley chopped (for garnish)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain.
  • Season chicken with salt and pepper, then cook in olive oil over medium heat until cooked through, about 6-8 minutes per side. Rest and slice.
  • Whisk milk and flour/cornstarch until smooth. Sauté garlic in the same pan, then add milk mixture, cream cheese, and chicken broth. Whisk until smooth and bubbly, about 2-3 minutes. Stir in Parmesan cheese and cook until thickened, 1-2 minutes.
  • Combine sauce with cooked pasta, then top with sliced chicken, Parmesan, and parsley. Season with salt and pepper to taste.

Notes

For extra flavor, add a pinch of nutmeg or red pepper flakes to the sauce.
