Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 packet fajita seasoning
  • 1 large onion
  • 3 bell peppers assorted bell peppers
  • 1.5 cups uncooked long-grain white rice
  • 3 cups chicken broth or water

Instructions

  • Cook rice in chicken broth until fluffy.
  • Sauté sliced onions and peppers until tender.
  • Add chicken to skillet and cook until fully done.
