Instructions
Preheat oven to 400ºF (200ºC). Season chicken with spices and roast for 15 minutes. Rest, then slice.
Cook couscous in boiling water for 5 minutes, then fluff and cool.
Whisk lemon juice, olive oil, salt, and pepper to make dressing.
Combine couscous, vegetables, feta, and dressing. Garnish with parsley and serve with sliced chicken.
