A flavorful and easy chicken couscous dish with aromatic herbs and lemon slices, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 1.25 pounds boneless skinless chicken thighs (4 pieces)
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup pearl couscous
  • 2 garlic cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves
  • 2 cups chicken broth
  • 0.5 lemon lemon (sliced)

Instructions 

  • Preheat oven to 400°F. Pat chicken dry and season with garlic powder, paprika, salt, and pepper.
  • Heat olive oil in skillet, cook chicken until golden, then remove. Add couscous, garlic, and thyme; toast for 2-3 minutes.
  • Deglaze with chicken broth, bring to boil, add chicken back, top with lemon slices, and bake for 15 minutes.

Notes

Use fresh herbs for best flavor and ensure chicken is cooked through.
