A warm and flavorful soup blending sweet carrots with spicy ginger, perfect for a cozy meal.

Ingredients

olive oil

  • 1 tbsp olive oil

onion

  • 1 medium onion (chopped)

carrots

  • 1 lb carrots (peeled and sliced)

ginger

  • 1 tbsp fresh ginger (grated)

vegetable broth

  • 3 cups vegetable broth (low-sodium preferred)

coconut milk

  • 1/2 cup coconut milk (or heavy cream for richness)

salt

  • 1/2 tsp salt (adjust to taste)

black pepper

  • 1/4 tsp black pepper (freshly ground)

lemon juice

  • 1 tbsp lemon juice (freshly squeezed)

fresh herbs

  • fresh parsley or cilantro (chopped, for garnish)

coconut milk drizzle

  • optional drizzle of coconut milk (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.
  • Add carrots and ginger; cook for 2–3 minutes, stirring.
  • Pour in broth, bring to boil, then simmer 20 minutes until carrots are tender.
  • Cool slightly, then blend until smooth. Return to pot.
  • Stir in coconut milk, salt, pepper, lemon juice; warm for 2–3 minutes.
  • Serve hot, garnished with herbs and coconut milk drizzle.

Notes

For a creamier texture, use heavy cream instead of coconut milk.
