Instructions
Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.
Add carrots and ginger; cook for 2–3 minutes, stirring.
Pour in broth, bring to boil, then simmer 20 minutes until carrots are tender.
Cool slightly, then blend until smooth. Return to pot.
Stir in coconut milk, salt, pepper, lemon juice; warm for 2–3 minutes.
Serve hot, garnished with herbs and coconut milk drizzle.
Notes
For a creamier texture, use heavy cream instead of coconut milk.
