A rich and flavorful spice cake layered with caramel and cream cheese frosting, perfect for special occasions or cozy gatherings.

Ingredients

Cake Batter

  • 1 ¾ cups all-purpose flour
  • 1 ¼ tsp baking powder
  • ¼ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¾ tsp ground cardamom
  • ¾ tsp ground ginger
  • ¼ tsp ground clove
  • ¼ tsp ground black pepper (optional) (optional but really awesome!)
  • ½ tsp salt
  • 6 tbsp unsalted butter (softened)
  • 3 tbsp sunflower oil (or other neutral-tasting oil)
  • 1 cup granulated sugar
  • cup packed dark brown sugar
  • 1 tsp pure vanilla extract
  • 3 large eggs (at room temperature)
  • ½ cup sour cream
  • ½ cup whole milk
  • cup 35% heavy whipping cream
  • 1 tbsp packed dark brown sugar
  • 2 tsp skim milk powder
  • ½ tsp pure vanilla extract
  • 2 tbsp Salted Caramel Sauce (to swirl on top)

Cream Cheese Filling

  • ½ block cream cheese (softened)
  • 1 cup 35% heavy whipping cream
  • 3-4 tbsp packed dark brown sugar (depending on sweetness preference)
  • ½ tsp pure vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease, flour, and line two 8-inch pans with parchment.
  • Mix dry ingredients. Beat butter, oil, sugars, and vanilla until fluffy. Add eggs one at a time, then sour cream. Alternate adding flour mixture and milk, then beat briefly.
  • Divide batter into pans and bake for 25-27 minutes. Cool completely on wire racks.
  • Whip cream, brown sugar, milk powder, and vanilla until stiff peaks form for filling. Beat cream cheese until smooth, then fold in whipped cream and sugar to make frosting.
  • Assemble: layer cake with filling, swirl caramel on top, then frost. Chill before serving.

Notes

Chill the frosting if too soft before assembling for cleaner layers.
