Ingredients
Cake Batter
1 ¾cupsall-purpose flour
1 ¼tspbaking powder
¼tspbaking soda
1 ½tspground cinnamon
¾tspground cardamom
¾tspground ginger
¼tspground clove
¼tspground black pepper (optional)(optional but really awesome!)
½tspsalt
6tbspunsalted butter(softened)
3tbspsunflower oil(or other neutral-tasting oil)
1cupgranulated sugar
⅓cuppacked dark brown sugar
1tsppure vanilla extract
3largeeggs(at room temperature)
½cupsour cream
½cupwhole milk
⅔cup35% heavy whipping cream
1tbsppacked dark brown sugar
2tspskim milk powder
½tsppure vanilla extract
2tbspSalted Caramel Sauce(to swirl on top)
Cream Cheese Filling
½blockcream cheese(softened)
1cup35% heavy whipping cream
3-4tbsppacked dark brown sugar(depending on sweetness preference)
½tsppure vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease, flour, and line two 8-inch pans with parchment.
Mix dry ingredients. Beat butter, oil, sugars, and vanilla until fluffy. Add eggs one at a time, then sour cream. Alternate adding flour mixture and milk, then beat briefly.
Divide batter into pans and bake for 25-27 minutes. Cool completely on wire racks.
Whip cream, brown sugar, milk powder, and vanilla until stiff peaks form for filling. Beat cream cheese until smooth, then fold in whipped cream and sugar to make frosting.
Assemble: layer cake with filling, swirl caramel on top, then frost. Chill before serving.
Notes
Chill the frosting if too soft before assembling for cleaner layers.
