Ingredients

quinoa

  • 1 cup quinoa (rinsed)

cherry tomatoes

  • 1 cup cherry tomatoes (halved)

mozzarella pearls

  • 1 cup mozzarella pearls

olive oil

  • 1 tablespoon olive oil

balsamic glaze

  • 1 tablespoon balsamic glaze (see note)

fresh basil

  • 2 tablespoons chopped fresh basil

salt and pepper

  • Salt and pepper

Instructions 

  • Cook the quinoa according to package instructions, then let it cool and fluff with a fork.
  • Transfer the cooled quinoa to a large bowl and add cherry tomatoes, mozzarella, and olive oil. Toss to combine.
  • Top with chopped basil, season with salt and pepper, and drizzle with balsamic glaze.

Notes

Use fresh basil for the best flavor and adjust seasoning to taste.
