2clovesgarlic, minced
1smallshallot, finely chopped
1mini bell pepper or ½ regular bell pepperbell pepper, sliced thin
80gpasta (penne, fettuccine, spaghetti)
8-10shrimppeeled and deveined shrimp
Pinchfor seasoningsalt and pepper for shrimp
¼tspCajun seasoning for shrimp
1tbspolive oil or cooking spray
¼tspsmoked paprika
¼tspCajun seasoning
¼tspcayenne pepper, adjust to taste
¼tspdried parsley
¼tspchilli flakes (optional)
¼tspsalt
⅓ to ½cuphalf and half cream
½cuppasta water (add gradually for sauce consistency)
Instructions
Season shrimp with salt, pepper, and Cajun seasoning. Sear in hot oil for 2-3 minutes per side until pink and crispy. Remove and set aside.
Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
Sauté garlic and shallots in the same pan. Add bell pepper, paprika, Cajun seasoning, cayenne, parsley, chili flakes, and salt. Pour in half and half, adding pasta water gradually to reach desired sauce consistency. Simmer.
Return shrimp to the pan, add cooked pasta, and toss to coat. Simmer for 1-2 minutes. Adjust seasoning and serve hot.
