A flavorful one-pan dish combining spicy Cajun-seasoned shrimp with tender rice for a quick and satisfying meal.

Ingredients

Rice and Broth

  • 1 ⅓ cups uncooked long grain white rice
  • 2 ⅔ cups chicken broth

Shrimp

  • 1 pound large or jumbo shrimp (peeled and de-veined)

Butter

  • 4 tablespoons butter (melted, divided)
  • 1 teaspoon minced garlic
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano (may sub Italian herb blend or Herbs de Provence)
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Instructions 

  • Whisk together all Cajun seasoning ingredients. Melt 2 tbsp butter, stir in garlic, half of seasoning, and rice.
  • Add chicken broth, bring to boil, then simmer covered for 15 minutes, stirring occasionally.
  • Mix remaining melted butter with remaining seasoning, coat shrimp, then cook until pink, about 3-5 minutes.
  • Stir shrimp into rice, cover, and cook for 3-5 minutes until done. Garnish and serve.

Notes

Ensure shrimp is cooked until opaque for best flavor and safety.
