Instructions
Heat oil in a skillet, cook sausage until browned, about 3-5 minutes.
Add peppers and onion, cook until tender, about 5 minutes.
Stir in garlic and Cajun seasoning, cook 1-2 minutes until fragrant.
Add tomatoes, rice, and broth; bring to boil, then cover and simmer 20 minutes.
Remove from heat, let rest 5 minutes, then fluff rice and serve garnished with green onions.
Notes
