A flavorful one-pan dish combining spicy sausage, colorful peppers, and seasoned rice for a quick and satisfying meal.

Ingredients

Meat

  • 14 ounces andouille sausage (cut into ¼ inch rounds)
  • 1 tablespoon cooking oil
  • 1 red bell pepper red bell pepper (sliced)
  • 1 green bell pepper green bell pepper (sliced)
  • ½ yellow onion yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon Cajun Seasoning
  • 10 ounce can diced tomatoes with green chilies
  • 1 cup long grain white rice
  • cups chicken broth

Garnish

  • green onions for garnish green onions (sliced)

Instructions 

  • Heat oil in a skillet, cook sausage until browned, about 3-5 minutes.
  • Add peppers and onion, cook until tender, about 5 minutes.
  • Stir in garlic and Cajun seasoning, cook 1-2 minutes until fragrant.
  • Add tomatoes, rice, and broth; bring to boil, then cover and simmer 20 minutes.
  • Remove from heat, let rest 5 minutes, then fluff rice and serve garnished with green onions.

Notes

Adjust seasoning to taste and serve hot for best flavor.
