Start your day with these delicious and wholesome blueberry oat breakfast bars, packed with oats, blueberries, and a hint of cinnamon.

Ingredients

Dry ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 0.5 cup light brown sugar, packed
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Wet ingredients

  • 0.5 cup unsalted butter, melted and cooled
  • 0.25 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Blueberry mixture

  • 2 cups fresh blueberries, or frozen thawed and drained
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment.
  • Mix oats, flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk melted butter, yogurt, egg, and vanilla.
  • Combine wet and dry, reserve 1 cup for topping, then press remaining into pan.
  • Toss blueberries with sugar, cornstarch, and lemon juice. Spread over base, then crumble reserved mixture on top.
  • Bake for 30-35 minutes until golden and bubbling. Cool, cut into bars, and serve.

Notes

Store in an airtight container for up to 3 days or freeze for longer storage.
