Start your day with these delicious and wholesome blueberry oat breakfast bars, packed with oats, blueberries, and a hint of cinnamon.

Blueberry mixture

fresh blueberries, or frozen thawed and drained

Instructions
Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment.
Mix oats, flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk melted butter, yogurt, egg, and vanilla.
Combine wet and dry, reserve 1 cup for topping, then press remaining into pan.
Toss blueberries with sugar, cornstarch, and lemon juice. Spread over base, then crumble reserved mixture on top.
Bake for 30-35 minutes until golden and bubbling. Cool, cut into bars, and serve.
Notes
Store in an airtight container for up to 3 days or freeze for longer storage.
