Delight in fluffy pancakes infused with fresh blueberries and coconut flakes, perfect for a tropical breakfast treat.
Ingredients
Dry ingredients

Wet ingredients

Coconut Oil Spray
(for cooking pancakes (optional: butter))
Instructions
Mix dry ingredients: flour, baking powder, salt, and sugar. Set aside.
Combine wet ingredients: milk, egg, vanilla, and melted butter. Mix well.
Pour wet into dry, stir gently until just combined. Fold in blueberries and coconut.
Heat skillet, spray with coconut oil. Pour 1/4 cup batter for each pancake. Cook 2-3 minutes until golden, flip and cook another 2-3 minutes.
Serve immediately with maple syrup, coconut, and blueberries.
Notes
For extra flavor, top with additional coconut flakes and fresh blueberries.
