Delight in fluffy pancakes infused with fresh blueberries and coconut flakes, perfect for a tropical breakfast treat.

Ingredients

Dry ingredients

  • 1 1/2 cups white flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar

Wet ingredients

  • 1 1/4 cups whole milk
  • 1 egg egg
  • 1 tbsp unsalted butter (melted)
  • 1/2 tsp vanilla extract

Add-ins

  • 1 cup fresh blueberries
  • 1 cup sweetened coconut flakes
  • as needed Coconut Oil Spray (for cooking pancakes (optional: butter))

Instructions 

  • Mix dry ingredients: flour, baking powder, salt, and sugar. Set aside.
  • Combine wet ingredients: milk, egg, vanilla, and melted butter. Mix well.
  • Pour wet into dry, stir gently until just combined. Fold in blueberries and coconut.
  • Heat skillet, spray with coconut oil. Pour 1/4 cup batter for each pancake. Cook 2-3 minutes until golden, flip and cook another 2-3 minutes.
  • Serve immediately with maple syrup, coconut, and blueberries.

Notes

For extra flavor, top with additional coconut flakes and fresh blueberries.
