A fresh and vibrant salad combining black beans, corn, avocado, and rice, perfect for a quick and healthy meal.
Ingredients
Rice

uncooked white rice
Vegetables

avocado
avocado (diced)

can (14 fl oz)
black beans (drained & rinsed)

can (12 fl oz)
corn (drained)
(or use fresh corn cut off the cob)

red onion (chopped)

fresh cilantro (chopped)
to taste
Salt & pepper

olive oil

lime juice + zest of 1 lime

honey

Instructions
Cook the rice according to package directions and let it cool.
Whisk together dressing ingredients in a small bowl.
Combine remaining ingredients with cooked rice and toss with dressing. Season with salt & pepper. Chill or serve immediately.
