A fresh and vibrant salad combining black beans, corn, avocado, and rice, perfect for a quick and healthy meal.

Ingredients

Rice

  • 1/2 cup uncooked white rice

Vegetables

  • 1 avocado avocado (diced)
  • 1 can (14 fl oz) black beans (drained & rinsed)
  • 1 can (12 fl oz) corn (drained) (or use fresh corn cut off the cob)
  • 1-2 tablespoons red onion (chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • to taste Salt & pepper
  • 1/4 cup olive oil
  • 2 tablespoons lime juice + zest of 1 lime
  • 1 teaspoon honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder

Instructions 

  • Cook the rice according to package directions and let it cool.
  • Whisk together dressing ingredients in a small bowl.
  • Combine remaining ingredients with cooked rice and toss with dressing. Season with salt & pepper. Chill or serve immediately.

Notes

Adjust lime and seasoning to taste for best flavor.
