Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into bite-sized pieces)

Vegetables

  • 2 medium zucchinis (sliced into half-moons)
  • 1 cup cherry tomatoes (halved)
  • ½ piece red onion (thinly sliced)

Aromatics & Oils

  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil (extra virgin preferred)

Spices & Herbs

  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Cheese

  • ½ cup mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (grated)

Fresh Herbs

  • 2 tablespoons fresh parsley (chopped)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss chicken and vegetables with olive oil, garlic, and spices.
  • Spread mixture in a baking dish and top with cheeses and parsley.
  • Bake for 20-25 minutes until chicken is cooked and cheese is bubbly.
