Ingredients

Protein

  • 1 lb chicken breast (cut into 1-inch chunks)
  • 4 tbsp dijon mustard (preferably Maille for smoothness)
  • 4 tbsp honey
  • 1.5 tsp onion powder
  • 1.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 1 tbsp avocado oil (preferably Chosen Foods brand)
  • salt to taste salt
  • pepper to taste pepper

Vegetables

  • 1 lb green beans (trimmed and halved)
  • 2 tsp garlic powder
  • 1 tbsp lemon juice (seeds removed before juicing)
  • 1 tbsp avocado oil (preferably Chosen Foods brand)
  • salt to taste salt
  • pepper to taste pepper

Carbohydrate

  • 2 cups jasmine rice (rinsed thoroughly to remove excess starch)

Instructions 

  • Mix honey, dijon mustard, onion powder, garlic powder, smoked paprika, salt, and pepper to create the sauce.
  • Cook chicken chunks in a skillet with avocado oil until browned and cooked through.
  • Steam or sauté green beans with garlic powder, lemon juice, avocado oil, salt, and pepper until tender.
  • Cook jasmine rice according to package instructions.
  • Assemble bowls with rice, chicken, and green beans. Drizzle with honey mustard sauce before serving.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lemon.
