A delicious and healthy vanilla birthday cake made with wholesome ingredients and topped with your favorite frosting.

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 0.5 tsp kosher salt

Wet Ingredients

  • 6 large egg whites egg whites (not the full egg)
  • 7 Tbsp unsalted butter (room temperature)
  • 0.5 cup vanilla Greek yogurt (room temperature)
  • 1.33 cups oat milk or any milk (room temperature)
  • 0.75 cup maple syrup
  • 1 Tbsp vanilla extract

Frosting

  • 1-2 batches healthy vanilla buttercream frosting (depending on frosting amount)
  • 1-2 batches dairy-free chocolate frosting (depending on frosting amount)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and line your cake pans with parchment paper.
  • Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  • Beat egg whites until stiff peaks form. Gently set aside.
  • Cream together butter and Greek yogurt, then add maple syrup and vanilla until smooth.
  • Alternate adding dry ingredients and milk to the butter mixture on low speed; fold in egg whites gently.
  • Divide batter into pans and bake for 20-25 minutes. Cool completely before frosting.

Notes

Ensure egg whites are whipped to stiff peaks for best texture.
