Ingredients

Oats

  • 2 cups Rolled oats (use old-fashioned oats for a chewy texture)

Flour

Sugar

  • 0.5 cup Brown sugar (adds natural sweetness and moisture)

Baking powder

  • 1 teaspoon Baking powder (lightens the oat base)

Ground cinnamon

  • 1 teaspoon Ground cinnamon (complements the blueberry)

Salt

  • 0.5 teaspoon Salt (balances the sweetness)

Blueberries

  • 2 cups Fresh or frozen blueberries (star ingredient)

Sweetener

  • 0.25 cup Honey or maple syrup (natural sweeteners)

Cornstarch

  • 2 tablespoons Cornstarch (thickens the filling)

Lemon zest

  • 1 tablespoon Lemon zest (adds brightness)

Butter

  • 0.25 cup Butter (cold and cubed for topping)

Brown sugar (for caramelized finish)

  • 0.25 cup Brown sugar (for a caramelized finish)

Chopped nuts (optional)

  • 0.5 cup Chopped nuts (walnuts or pecans) (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Mix oats, flour, brown sugar, baking powder, cinnamon, and salt.
  • Combine blueberries, honey, cornstarch, and lemon zest to make the filling.
  • Press half of the oat mixture into a baking pan, spread the blueberry filling over it, then top with remaining oat mixture and butter cubes. Sprinkle brown sugar and nuts if using.
  • Bake for 25 minutes until golden and bubbly. Let cool before slicing.
