A flavorful low-carb casserole combining seasoned ground beef with cauliflower rice, topped with melted cheddar cheese and fresh cilantro.

Instructions
Heat olive oil in a skillet, cook onion and garlic until softened.
Add ground beef, season with chili powder, cumin, salt, and pepper; cook until browned.
Stir in cauliflower rice and cook until tender, about 5-7 minutes.
If using, add green peas and cook for 2-3 minutes. Transfer mixture to baking dish, top with cheese, and bake at 375°F for 10-15 minutes.
Garnish with cilantro before serving.
Notes
For a lower sodium version, reduce salt and use fresh herbs.
