A flavorful low-carb casserole combining seasoned ground beef with cauliflower rice, topped with melted cheddar cheese and fresh cilantro.

Ingredients

Meat

  • 1 lb ground beef

Vegetables

  • 4 cups cauliflower rice (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 0.5 cup onion, chopped
  • 0.5 cup green peas (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Garnish

  • fresh cilantro (for garnish)

Instructions 

  • Heat olive oil in a skillet, cook onion and garlic until softened.
  • Add ground beef, season with chili powder, cumin, salt, and pepper; cook until browned.
  • Stir in cauliflower rice and cook until tender, about 5-7 minutes.
  • If using, add green peas and cook for 2-3 minutes. Transfer mixture to baking dish, top with cheese, and bake at 375°F for 10-15 minutes.
  • Garnish with cilantro before serving.

Notes

For a lower sodium version, reduce salt and use fresh herbs.
