Enjoy a flavorful and healthy bowl featuring marinated shrimp, fresh vegetables, and rice, all drizzled with smoky BBQ sauce.

Ingredients

Protein

  • 1 lb large shrimp (peeled and deveined)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley
  • ½ tsp salt
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp cayenne (optional) (optional if you want it to be spicy)
  • ½ cup bbq sauce (divided) (half to marinate shrimp, half for drizzling)

Vegetables

  • 2 mini cucumbers sliced
  • 1 cup shredded carrots
  • 1 avocado sliced or diced

Carbohydrate

  • 2 cups white rice (cooked or sub brown rice or quinoa)

Instructions 

  • Cook rice according to package instructions.
  • Mix spices and coat shrimp; marinate briefly.
  • Cook shrimp in skillet with olive oil until pink, then add half of BBQ sauce.
  • Assemble bowls: divide rice, add shrimp, cucumbers, carrots, and avocado. Drizzle with extra BBQ sauce.
