Ingredients

Rice

  • 1.5 cups Long-grain white rice (jasmine or basmati preferred)

Water

  • 2.25 cups Water (for cooking rice)

Chicken

  • 1 lb Chicken breast (boneless and skinless)

BBQ Sauce

  • 0.5 cup BBQ Sauce (thick and glossy variety)

Sweet Corn

  • 1 cup Sweet corn (fresh or frozen)

Black Beans

  • 15 oz Black beans (drained and rinsed)

Avocado

  • 1 whole Avocado (ripe, thinly fanned)

Red Onion

  • 0.5 large Red onion (thinly sliced)

Cilantro

  • 0.25 cup Fresh Cilantro (chopped)

Ranch or Lime Crema

  • 0.25 cup Ranch or Lime Crema (for zig-zag drizzle)

Vegetable Oil

  • 2 tbsp Vegetable Oil (for searing)

Instructions 

  • Cook rice with water until tender, about 15 minutes.
  • While rice cooks, sear chicken breasts in vegetable oil until cooked through, about 6-8 minutes per side.
  • Shred cooked chicken and toss with BBQ sauce.
  • Assemble bowls with rice, BBQ chicken, corn, black beans, avocado, red onion, and cilantro.
  • Drizzle with ranch or lime crema in zig-zag pattern before serving.

Notes

For extra flavor, marinate chicken in BBQ sauce for 30 minutes before cooking.
