A quick and flavorful bowl combining quinoa, chicken, corn, beans, and BBQ sauce for a satisfying meal.

Ingredients

Grains

  • 1 cup dry quinoa
  • 2 cups water or stock

Protein & Vegetables

  • 1 cup frozen sweet corn kernels, thawed (fresh in season)
  • 1 cup chopped cooked chicken
  • 1 cup cooked beans (pinto or black)
  • 1 cup good-quality BBQ sauce, divided
  • 1 avocado avocado, sliced

Instructions 

  • Bring quinoa and water or stock to a boil, then simmer for 12-15 minutes until cooked.
  • Mix corn, chicken, and beans in a bowl.
  • Add hot quinoa to the bowl and stir to combine.
  • Stir in 1/2 cup BBQ sauce.
  • Divide mixture into bowls, top with avocado slices, and drizzle with remaining BBQ sauce.

Notes

Feel free to add your favorite toppings or adjust the BBQ sauce for more flavor.
