A quick and flavorful skillet dish combining beef, pasta, and BBQ sauce for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 1 red bell pepper red bell pepper (finely chopped)
  • ½ teaspoon salt

Liquids and Sauces

  • cups beef broth
  • 1/2 cup bbq sauce

Dry Pasta and Frozen Items

  • 2 cups rotini pasta (dry uncooked)
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese

Instructions 

  • Cook ground beef, red bell pepper, and salt in a skillet until beef is no longer pink. Drain excess fat.
  • Add beef broth, BBQ sauce, pasta, and corn. Bring to a boil, then cover and simmer for 20 minutes.
  • Stir in 1 cup of cheese until melted. Top with remaining cheese and cover until melted.
  • Serve hot, optionally with sour cream and green onions.
