Delicious and healthy banana protein muffins perfect for a quick breakfast or snack, packed with protein and flavor.
Ingredients
Dry ingredients

vanilla protein powder
(about 50g)

superfine blanched almond flour
(NOT almond meal)

Wet ingredients

egg

plain whole-milk Greek yogurt
(can use vanilla or 2%)

ripe spotty bananas
(mashed (about 1 cup))

honey or maple syrup

Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease lightly.
Mix dry ingredients: protein powder, almond flour, baking powder, cinnamon, and salt.
Whisk wet ingredients: egg, yogurt, mashed bananas, and honey until smooth.
Combine wet and dry, stir until just mixed, then fold in chocolate chips.
Spoon batter into muffin cups, filling about three-quarters full. Bake for 15 minutes.
Cool for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For taller muffins, fill every other cup.
