Baked Salmon with Lemon Herb Sauce

A delicious and healthy baked salmon dish paired with roasted potatoes and broccoli, all topped with a flavorful lemon herb sauce.

Ingredients

Vegetables

  • 1 lb small gold potatoes (cut into bite-sized pieces)
  • Olive oil
  • 2–3 cups broccoli florets (or baby broccoli)

Protein

  • 1–2 lbs salmon (cut into 2-4 filets)
  • 6–8 tablespoons butter
  • 1–2 cloves garlic, minced
  • 1 shallot shallot, minced
  • 2–3 sprigs fresh thyme
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • Juice of 1 lemon lemon juice
  • 2 tablespoons chopped fresh parsley or basil

Seasoning

  • Salt and pepper (to taste)

Instructions 

  • Preheat oven to 400°F (200°C). Roast potatoes for 25 minutes.
  • Melt butter, sauté garlic, shallot, and thyme for 3–5 minutes. Add broth and cream, simmer until slightly thickened. Remove thyme.
  • Whisk in lemon juice, parsley, salt, and pepper. Season salmon and broccoli, then add to baking sheet.
  • Bake salmon and vegetables for 10–15 minutes until salmon flakes easily. Drizzle with sauce and serve.

Notes

Ensure not to overcook the salmon to keep it moist and flaky.
