A delicious and healthy baked salmon dish paired with roasted potatoes and broccoli, all topped with a flavorful lemon herb sauce.
Ingredients
Vegetables

small gold potatoes
(cut into bite-sized pieces)
Olive oil

broccoli florets

(cut into 2-4 filets)

butter

garlic, minced

chicken broth
Juice of 1 lemon

chopped fresh parsley or basil

Instructions
Preheat oven to 400°F (200°C). Roast potatoes for 25 minutes.
Melt butter, sauté garlic, shallot, and thyme for 3–5 minutes. Add broth and cream, simmer until slightly thickened. Remove thyme.
Whisk in lemon juice, parsley, salt, and pepper. Season salmon and broccoli, then add to baking sheet.
Bake salmon and vegetables for 10–15 minutes until salmon flakes easily. Drizzle with sauce and serve.
Notes
Ensure not to overcook the salmon to keep it moist and flaky.
