Ingredients

Bread

  • 6 slices texas toast (frozen)

Eggs

  • 8 large eggs

Dairy

  • 2 tablespoons butter
  • 1/2 cup shredded white cheddar cheese

Produce

  • 2 avocados avocados (mashed)
  • 1/2 lemon lemon (juiced)
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt

Optional Garnish

Instructions 

  • Toast the bread in the oven according to package instructions.
  • Whisk eggs with salt and pepper, then cook in butter, stirring until fluffy. Sprinkle cheese halfway through cooking.
  • Mix mashed avocados with lemon juice, red pepper flakes, and salt. Spread on toasted bread and top with cheesy eggs.
  • Garnish with green onions if desired and serve hot.
