A creamy, flavorful salad combining ripe avocados, shredded chicken, and fresh herbs, perfect for a quick lunch or snack.

Ingredients

Avocados

  • 2 pieces avocados, chopped, divided
  • 0.33 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced (optional)
  • 1 whole lemon, juiced and zested
  • 2 cups cooked chicken, shredded
  • 2 stalks celery, diced
  • 1 bunch green onions, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh cilantro, chopped

Instructions 

  • Mash half of the avocados in a large bowl.
  • Add Greek yogurt, Dijon mustard, garlic, lemon juice, and zest. Whisk until smooth or blend for creaminess.
  • Mix in shredded chicken, diced celery, green onions, salt, and pepper. Stir well.
  • Gently fold in remaining chopped avocado. Top with cilantro and serve.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
