1bunchasparagus(trimmed and sliced into 1.5 inch pieces)
8ozpasta
4clovesgarlic(minced)
2tbspolive oil
2tbspbutter
1tbsplemon juice
1/2cupgrated parmesan cheese
Lemon zest, black pepper, and parmesan cheese for garnish
Instructions
Bring a pot of salted water to a boil. Blanch asparagus for 1-2 minutes, then drain and set aside. Cook pasta in the same water until al dente, then drain.
Heat olive oil and minced garlic in a pan over medium-low heat for 3 minutes. Add butter and cook for 2 minutes. Stir in lemon juice and cook for 1 minute.
Add parmesan cheese to the sauce and stir until melted. Toss cooked pasta with the sauce, then add blanched asparagus and toss again.
Serve garnished with lemon zest, black pepper, and additional parmesan cheese if desired.
Notes
For extra flavor, add red pepper flakes or fresh herbs.
