A fresh and flavorful pasta dish featuring tender asparagus, zesty lemon, and garlic, perfect for a quick and satisfying meal.

Ingredients

Vegetables

  • 1 bunch asparagus (trimmed and sliced into 1.5 inch pieces)
  • 8 oz pasta
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • 1/2 cup grated parmesan cheese
  • Lemon zest, black pepper, and parmesan cheese for garnish

Instructions 

  • Bring a pot of salted water to a boil. Blanch asparagus for 1-2 minutes, then drain and set aside. Cook pasta in the same water until al dente, then drain.
  • Heat olive oil and minced garlic in a pan over medium-low heat for 3 minutes. Add butter and cook for 2 minutes. Stir in lemon juice and cook for 1 minute.
  • Add parmesan cheese to the sauce and stir until melted. Toss cooked pasta with the sauce, then add blanched asparagus and toss again.
  • Serve garnished with lemon zest, black pepper, and additional parmesan cheese if desired.

Notes

For extra flavor, add red pepper flakes or fresh herbs.
